Just when we think we don’t have enough recipes for desserts, we get one that makes up for it. Mini pavlovas after lunch, anyone?
Pavlova is a type of meringue cake, usually topped with fresh fruits, whipped cream and fruit sauce. It’s made of foamy egg whites and sugar, and thanks to the way these simple ingredients act during baking, the result is both a soft and lightly crispy cake.
Enjoy these mini versions of pavlova and top them off with your favorite berries. This is an easy dessert that you can prepare ahead of time and finish off just before the guests arrive.
Pavlova Bites with Berries & Cream
- 8 egg whites
- 1 whole cup white sugar
- 4 tsp cornstarch
- 1 tsp vanilla extract
- 2 tsp white vinegar
- 2 cups berries of choice
- Preheat oven to 275 F.
- Beat egg whites in a large bowl. Aim for fluffy but firm egg whites (soft peaks). Continue adding sugar one tablespoon at a time and beat for 10 minutes. When done, fold in vanilla extract, white vinegar, and cornstarch.
- Line a baking tray with baking paper. Place spoonfuls of your meringue mixture onto the tray. Try to make them small and round.
- Bake for 45 minutes. Turn off the oven and leave the pavlovas inside to gradually cool off.
BONUS: Honey Whipped Cream
To make honey whipped cream, beat together 2 cups of whipping cream, 1 teaspoon of vanilla extract and 3-4 tablespoons of raw honey.
Serve on top of pavlovas along with fresh berries.
