Chicken Dum Biryani


Chicken Dum Biryani is an Indian dish best described as a mixed rice dish packed full of spices. Rice is coupled with meat (it doesn’t have to be chicken), but only after it’s been cooked separately. That’s when the two are layered and additionally cooked (or baked) together.

This is a challenging recipe that engages all of your senses. Dum Biryani is a perfect dish to make in larger batches and it won’t lose any of its original flavors when you heat it up. On the contrary, that will make it even better.

Ingredients for Chicken Dum Biryani

Spices and herbs

  • 4 bay leaves
  • 2 tbsp red chili powder
  • 2 tbsp turmeric powder
  • 2 tsp garam masala
  • 1-2 star anise
  • 4 cinnamon sticks
  • 10 cardamom pods
  • 10 cloves
  • 1 tsp fennel seeds
  • 2 tsp cumin powder
  • 4 tbsp ginger garlic paste
  • 5 whole tamarinds
  • Salt to taste

Meat and vegetables

  • 8 lbs whole chicken (sliced into strips)
  • 2 cups plain yogurt
  • 4-5 onions, chopped
  • 2 cups tomatoes, diced


  1. Prepare your marinade: mix yogurt with turmeric, red chili powder, ginger garlic paste, and fennel seeds. Place everything in a large bowl, add chicken and let sit for 1-2 hours.
  2. Use a large pot to heat oil. SauteƩ the onion and add spices (half of the cardamom pods, cinnamon sticks and bay leaves, cloves and cumin). When the onion turns translucent, add tomatoes and cook until water evaporates. Then, add chicken and cook for half an hour.
  3. Cook rice in a separate pot. Add the remainder of the cardamom pods, cinnamon sticks, and bay leaves. Add star anise.
  4. After both the chicken and the rice are cooked, it’s time to layer them. Start with a layer of chicken topped with a layer of rice. Continue until you use everything up. You can finish this dish stovetop (cook under a heavy lid) or bake it in the oven for 30-45 minutes.
